Almond Joy Candy!

Almond Joy candy- This is video #2 in our Valentines series!
It’s the season of love and nothing is more romantic than making sweets for your sweetheart as a gift. We want to take the mystery out of making chocolate into a delicious candy! This is a simple yet delicious recipe that requires 20 mins to melt, mix and set these delicious candies for your valentine. We used milk chocolate instead of dark chocolate ( I like sweeter chocolate)
1/2 cup white light corn syrup
1/4 tsp salt
10 large marshmallows
2 cups coconut flakes
1 tsp vanilla
1 small can of roasted almonds
2 cups milk chocolate chips
In a large sauce pan (medium heat) pour in syrup, marshmallows, and salt. Stir until marshmallows are melted. (about 5 mins or more)
Continue to stir over heat for an additional minute. Remove from stove and add coconut and vanilla.
Stir well and transfer to a bowl to cool in the fridge. The mixture needs to get cool enough that it can be rolled into balls.
In the meantime, melt the chocolate chips. I like to do this by putting them in a metal bowl and placing the bowl over a pot of boiling water, using the double boiler method.
Stir until chocolate is melted and smooth. Roll the coconut mixture into small balls and press an almond into the top.
Dip each one in chocolate then let cool on wax paper over a cookie sheet.
I took a spoon and poured a small amount of chocolate on the wax paper and set my coconut almond mixture in it and then carefully poured chocolate over candy to cover entire piece of candy. Allow to dry and set in a cold setting for about 1 hour then serve delicious y’all. It will last several days in the fridge.
